The two "hero" versions of the "captain vest" seen were quite similar, but they did have a few notable differences.
First, Captain Picard's front vest yoke closed in the center on a mid-quilt line (with the yoke zipper trim's outer edge falling on the centermost quilt line), whereas Captain Sisko's vest closed in the center on an actual quilt line (with the yoke zipper's outer edge falling on a mid-quilt line).
In other words, the Captain Picard vest's front opening horizontally extended 2 ½ quilt lines on each side, while the Captain Sisko vest's front opening horizontally extended for 2 quilt lines on each side.

Second, and perhaps most noticeably, the Sisko's vest was slightly wider at the shoulder seam than Captain Picard's.

This may have been because of the difference in the two actors' shoulder widths, or it could have been an intentional stylistic differentiation; regardless, the Sisko's was a bit wider.
Not only was the Sisko's vest shoulder seam wider than Captain Picard's, but the curvature of the armhole's edge was slightly different; Captain Picard's curved inward the distance of one quilt line, while the Sisko's curved inward the distance of two.

Lastly, Captain Picard's armholes were completely rounded, whereas the Sisko's armholes had a straight, flat bottom, and the trim was mitered where the armhole pivoted.
